Vegan – day 1 of I don’t know how many

First of all, Im back!

The unimaginable has happened. I have went vegan, only for a day, but seeing that I thought I´d be the last person on this earth ages ago to go vegan it actually has happened.

The thought has been going through my mind since I had my daughter. Simply because I got a little bit crazy with helping the environment and was looking online on how I could help the planet with changing some things in my lifestyle. More on that in another post.

It is scary how Ive came to realise farming animals is polluting the earth. I am not going to have a massive spiel on here about it lol I suggest you do your own research and come to your own decision, its always the best way!

So. I watched What the health on Netflix yesterday. and OH. MY. GOD. IF you’re going to watch it be prepared to go off meat, well at least for a day like I did, I am not keen on eating animal products today either, my partner suggested chicken for dinner and I almost spewed.

I might even go vegan a few days a week, this is all very undecided!

For me that movie was eye opening and made so much sense to me.

The only thing is, I dont have a clue what to have for my dinner now! I had some ready sweet and sour sauce, really good from Lidl, with chick peas and rice. There is some veg in the sauce and it was lovely!

My question to you guys is, what supermarket has the best selection? If there are any vegans reading this could you share some recipes please?

Make your own baby food!

When my daughter was approaching weaning age I started looking into weaning, options and clever things to do! I am also in a bump group on Facebook with girls in Iceland that were all due in the same month as I was and were all still very active in that group sharing loads of things.. They gave me a lot of inspiration with so many things! If there is anything similar to that here in Scotland, or in the UK even, please give me info in comments 🙂

I started looking at these pouches you can get in the supermarkets and I was quite horrified with the prices on them from Ellas Kitchen, Heinz etc. and that is just for one meal!

So I hope this will give you inspiration to make your own!

I bought a kilo of carrots in Lidl for 0.59 pence! I peeled them all and cut both ends off and steamed them. 


After that I threw them all in my food processor until they were all mashed up, no bits what so ever. 

Then I put the mashed carrots in ice cube trays and in freezer tubs you can get from Nuby here. After they’re all frozen I take the cubes and put them in freezer bags but make sure I mark the bags with whats in them and the date I made them.

My daughter likes her vegetables and fruit mixed in with her baby rice just now and she will turn 6 months next week.

I am actually quite enjoying this and look at it as a little hobby. Lets not mention the money I am saving by doing all of this myself! That kilo of carrots will be mixed in with her baby rice, but the carrots will be 70% of the meal, and will last for 10 dinners! Which comes to 6 pence a dinner! If I would use just the carrots and no baby rice it would come down to 8 pence per dinner..

If you’re thinking this is a massive hassle it really isnt!

  1. Peel/cut up/rinse
  2. Steam
  3. Mash up in food processor
  4. Put in ice cube trays or freezable food tubs
  5. Once frozen put in freezer bags and mark them

I round up how long this took me in total and it was an hour..

Langar svo að mæla með því að mauka barnamatinn sjálf af því að það sparar svo mikla peninga og þá veistu líka að barnið þitt er að fá 100% hreina vöru! Eina sem þarf er að sjóða eða gufusjóða matinn og setja svo í klakabox eða í dollur sem eru einmitt ætlaðar fyrir að frjósa mat. Svo set ég allt í poka og merki hvað er í pokanum og dagsetninguna sem ég frysti kubbana á. 

Ég veit að þetta er að spara alveg fullt af pening heima líka og mér finnst þetta líka mjög gaman!

Food menu – 1st week of March 

Below is our food menu for this week! I hope this helps to inspire you to food plan and give you some ideas for your own food plan! 

Monday: whole chicken cooked with sweetpotato mash and fresh vegetables.

Tuesday: Chicken kebabs. Here I use leftover chicken from the day before. I cut the chicken up in small pieces and cook it in a little bit of oil in cayenne pepper and a little bit of cinnamon. I also use leftover fresh vegetables from the day before (cucumber, paprika and lettuce). I put the chicken in a tortilla wrap with tsasiki dip and vegetables.

Wednesday: penne pasta with ham and mushrooms.

Thursday: Tortilla pizzas. Using leftover ham and mushrooms from night before and tortilla wraps from Tuesday night. 

Friday: Rump steaks with baked potato and pepper sauce.

Saturday: Tacos. You can still use the same fresh veg as earlier in the week and save more shopping.

Sunday: roast chicken with root vegetables and mash.

Top tip : always go through your cupboards and use the ingredients you have there to save money. Use the food you have to make meals. And always always go to the shop with a shopping list! Any comments or thoughts please comment! I love hearing from you.

2017 – food menus and food planning!

I decided that my new year resolution would be to have a menu for the week and be a bit more organised with our food shopping. I realised that by going to the shop every day to buy that nights dinner is costing us an absolute fortune! 

I realise that we are already knees deep in January but I’ve just settled a little bit with the little one and life is seeming a bit normal again.

I decided to go food shopping every Monday and I would share with you the menu to maybe give you some ideas if you would like to do the same? If you appreciate this please let me know in the comments!

Á nýja árinu ákvað ég að taka Sólrúnu Diego til fyrirmyndar og vera með matseðil fyrir vikuna, bæði til að spara pundin og af því að ég fæ grænar af þessari spurningu á hverju kvöldi “hvað eigum við að hafa í matinn”. Nei ég held að þið skiljið ekki hversu mikið ég hata þessa pælingu! 

Nú þegar lífið er semí komið aftur í fyrra horf eftir barnsburð ákvað ég að byrja!

Mushroom and Parsley soup

What’s better then winding down from all the festive over eating then a healthy filling soup? 

This soup really is delish, even though I say so myself! Perfect for using that half tub of mushrooms I always end up with in my fridge that always ends up in the food bin! 

Ingredients:

  • 200 g Mushrooms of your choice
  • Medium sized onion
  • Garlic clove
  • 2 tablespoons flat leaf parsley
  • 2 tablespoons plain flour
  • 2 vegetable stock cubes
  • 200 ml single cream
  • 2 tablespoons Butter

Melt butter in a saucepan and add a finely chopped onion with the crushed garlic. Let it simmer in the butter, without browning, for 5 minutes while you chop the mushrooms. Chop mushroom! Add flour to the saucepan whilst stirring – don’t have a high heat on to prevent it from burning! Dissolve 2 stock cubes in 700 ml hot water and add gradually to the saucepan whilst stirring. Add half the chopped mushrooms to the saucepan and the parsley and let it simmer for 15 minutes. Whilst soup is simmering put the other half of mushrooms on a pan and let it fry with a tablespoon of butter until they begin to brown. 

I always think soup tastes better then next again day but I couldn’t resist with this one it smelled yummy! If you try it please comment and let me know what you think! 

Mér finnst ekkert betra á milli jóla og nýárs en léttir hollir kvöldverðir og þá sérstaklega súpur! Þessi sveppasúpa er æði! 

Innihald

  • 200 g Sveppir
  • Meðalstór laukur
  • Hvítlauksgeiri
  • 2 matskeiðar steinselja
  • 2 matskeiðar hveiti
  • 2 grænmetisteningar
  • 200 ml rjómi
  • 2 matskeiðar rjómi

Bræðum smjörið með fín skornum lauk og hvítlauksgeira í pott. Já ég ætla að tala eins og við séum að gera þetta saman það er eitthvað svo huggulegt! Aftur að súpunni.. já í pottinn er þetta komið og við skulum láta þetta malla aðeins saman án þess að laukurinn verði brúnn. Á meðan skerum við sveppina í litla bita og geymum til hliðar! Bætum svo við hveitinu rólega og hrærum hratt á lágum hita. Leysum upp grænmetiskubbana í heiti vatni og bætum í pottinn smám saman og byggjum súpuna upp.  Bætum svo við steinseljunni og helmingnum af sveppunum í pottinn. Látum þetta malla á meðan við smjörsteiktum hinn helminginn af sveppunum á pönnu þangað til þeir eru orðnir brúnir og bætum þeim líka við súpuna. Bætum svo við rjómanum og þá er þetta komið!

I have a.. soup! Mexican Chicken soup

Ég elska að malla súpur þegar veðrið er voðalega Októberískt.. já það er orð. Kalt, dimmt, vindur og rigning. Ekkert betra en að malla góða súpu já og svo er það eitthvað svo húsmæðralegt eitthvað. Ég allavegana fæ svo mikið egó og montið rýkur upp þegar ég malla eina góða. Skemmir ekki fyrir að gera auka og eiga svo í frystinum, sérstaklega fyrir mig sem tek alltaf með mér nesti í vinnuna – já og svo egóið þegar maður er spurður hvaða súpu maður sé með í vinnunni “Ég henti þessari fram úr erminni um daginn!”

Leiðbeiningar og hvað þarf í þessa er hérna fyrir neðan á ensku – ef það er eitthvað að vefjast fyrir ykkur endilega skellið í komment hérna fyrir neðan, ég elska komment.

When this season hits, the wet – not too cold  but still cold season, I love having soups for dinner! Making soup makes the house smell amazing and it gives me that feeling I am a superhousewife regardless of the time and effort it takes. It is relatively easy making a good soup, just don’t tell anyone that and the superhousewife label is yours!

Mexican Chicken soup is one of my favourites – a bit of a kick to it and very healthy.

I got the recipe originally online but I have made some changes to suit my taste – here goes:

You need

3 chicken breasts

1 red pepper

4 carrots

1 leek

5 cloves of garlic

1 onion

chili flakes or 1 red chili

1 tin of tomatoes

tomato puree

1 chicken stock cube

Double cream (I use at least 200mg)

Cream cheese ( I use small tub of philadelphia)

3 2,5 liters of water

Chilli heatwave Dorites, sour cream and grated cheese for later.

Heat oil in a big pot and put all the fresh vegetables and let them simmer in the oil. Add chicken stock cube, tin of tomatoes and garlic. Cut the chicken into fine little pieces and fry on a pan for 5 minutes, add salt and pepper and chilli flakes or fresh chilli. When almost cooked through add the chicken to the pot of vegetables simmering away. Lastly add the cream cheese and double cream and that is it!

The longer you let it cook over a small heat the better it gets, I usually give it about 2 hours.

When you are ready to eat it top it off with sour cream, grated cheese and the Doritos – this is a must!
